Turkey Thaw Time Calculator

Quick answer: USDA guidance is about 24 hours of fridge thawing per 4–5 pounds, or about 30 minutes per pound in cold water. A 16-pound turkey needs roughly 3–4 days in the refrigerator (16 ÷ 5 = 3.2 to 16 ÷ 4 = 4.0 days) or 8 hours in cold water (16 × 0.5), with the water changed every 30 minutes. Never thaw a turkey on the counter.

Refrigerator thaw time—

Estimate from USDA rules of thumb. Never thaw a turkey on the counter — once it sits at room temperature beyond two hours, bacteria grow rapidly.

How to use this calculator

Enter the weight of your turkey in pounds — check the label or your receipt. The calculator instantly shows refrigerator thaw time as a range, cold-water thaw time, how many water changes that means, and the latest date to start fridge thawing for today. Results update as you type.

How this is calculated

The calculator applies the USDA's two thawing rules directly:

  • Refrigerator thaw time = weight ÷ 4.5 days, shown as the range weight ÷ 5 to weight ÷ 4 days (USDA: approximately 24 hours per four to five pounds)
  • Cold-water thaw time = weight × 0.5 hours (USDA: approximately 30 minutes per pound)

Water changes = cold-water hours × 2, since USDA guidance is to change the water every 30 minutes. The "start thawing by" date is today's date minus the rounded-up maximum fridge days.

Assumptions and edge cases: these are USDA rules of thumb for a whole turkey; a densely packed or stuffed bird can take longer. Weight is limited to 1–40 lb. The start-by date counts calendar days backward from today. Thawed turkey is safe in the refrigerator for one to two more days, per USDA guidance.

Worked example

A 16-pound turkey, using the USDA rules:

  • Refrigerator: 16 ÷ 5 = 3.2 days to 16 ÷ 4 = 4.0 days → plan on 3–4 days
  • Cold water: 16 × 0.5 = 8 hours, changing the water every 30 minutes (16 water changes), then cook immediately

Frequently asked questions

How long does it take to thaw a turkey in the refrigerator?

USDA guidance is approximately 24 hours of thawing time for every four to five pounds of turkey. A 16-pound turkey therefore needs about 3 to 4 days in the refrigerator.

How long does cold-water thawing take?

USDA guidance is about 30 minutes per pound. A 16-pound turkey takes about 8 hours in cold water. Keep the turkey in its original wrapping, change the water every 30 minutes, and cook it immediately after thawing.

Can I thaw a turkey on the counter?

No. USDA food safety guidance says never to thaw a turkey on the kitchen counter. Once a turkey sits at room temperature beyond two hours it enters the Danger Zone where bacteria grow rapidly. Use the refrigerator, cold water, or microwave methods instead.

Can I cook a turkey from frozen?

Yes — USDA says it is safe to cook a turkey from its frozen state, but it will take at least 50 percent longer to fully cook than a thawed bird. Use a food thermometer to confirm the thickest parts reach 165°F.
